Woohoo! Posting about the trip certainly brought me back memories. Now, that I’m having a lunch break- thought I should resume food posting again. ;p So….did anyone miss my food posting? (thick skin hor?)
I guess it’s time to admit that I enjoy food that requires less brain cells action. You know, those sort of food that u don’t have to worry about bones but is still tasty? The sort of food that enables me to multi task (aka read, type, chew and swallow at the same time without choking). Yes yes, I can be shallow AND lazy when it comes to food prep work + cooking + eating but hey, it works!
Making tuna patties are fun. Seriously, my play doh action when I was a kid came in useful here. First of all, it does not matter if the patties are regular in shape or not. Just shape and throw in on the grill pan. If it falls flat, that’s great, if isn’t, than that’s artistic. Using a spatula or wooden spoon to help shape it can be a good idea too. Regardless, the crisp outer shell of the patty combines with the smooth nature of mashed potato inside creates this lovely contrasting texture as you bite into it.
As for the chickpea salad. Well, it’s just to show my mum and grandma that I have been a good girl and have been eating my legumes and veges. :p In all honest though, I’m a big fan of chickpeas. The nutty taste of this legumes attracts me more than other sorts of beans. I used to eat it out of the can as a snack during my undergrad years.
Tuna Patties (makes 12-15 small to medium sized patties)
3 potatoes (chopped and boiled)
2 cans of spicy chili tuna
knob of butter/spread
1/2-1 cup of skim milk
3 cups of spicy packaged bread crumbs
1 beaten egg
Mash potato with 1/4 cup of milk and butter. Add more milk as you continue mashing to create the consistency you desire. Fold in a tablespoon or so of crushed garlic and both cans of tuna. If it is not moist enough, add some olive oil. Season with pepper and salt.
Meanwhile, preheat your grill pan to hot with some oil. Shape mixture into palm sized patties and coat it liberally with egg mixture. Then roll the same patty on to the breadcrumb mixture. Throw it on (i dare u!) to the grill pan for about 3 -4 minutes each side.
1 can of chickpea
100 grams of button mushrooms grilled
2 fresh tomatoes chopped
handful of crushed toasted walnuts
2-3 generous tablespoons of mayo
1 tablespoon of lemon juice
If desire, u can warm the chickpeas up in the microwave for about 1 min. Toss chickpeas, mushrooms, walnuts and tomatoes together. Combine mayo with lemon juice and toss into the mixture. Season.
Plate it up. Drizzle some mayo onto the patties together with sweet chilli sauce. Serve with chickpea salad on the side.
