My toddler’s choice: Sweet Potato, Carrot and Apple Muffins (Paleo, Clean Eating, Gluten Free)

Sweet Potato, apple and carrot MuffinsI appreciate my off days with Asher. We laugh, giggle and try to make the most of it.

It is not always fun and games though. There are things in life that we have to attend to regardless of how much fun is it to have fun with a toddler. 

Yes, you will find me multi tasking on some mornings. Perhaps trying to encourage Asher to eat his breakfast while doing a batch up cook. You might even see me folding clothes while trying to have a conversation with my dad over FaceTime. In between, the oven might ring and I will rush to check one of our bakes or a meal that is cooking, while making sure Asher stays out of the way of the hot oven.  The floor would need vacuuming and a mop. The toilets would be scrubbed and bed sheets changed. That, and it is not even 9am yet. IMG_2431 (640x427)

We have some mornings when Asher wakes bright and early at 5:30am, excited to face the day while I grudging wash up and get change. 

These muffins were made during one of those mornings. I decided to make the most out of it with a toddler who clearly would not return back to bed and wanted to “play”. I gathered up some ingredients and allow him to “design his own muffin”. IMG_2425 (640x427)

  • sweet potato
  • carrots
  • apples
  • walnuts

If you are wondering what I put on the table… In addition to the above, we had yogurt, feta, almonds and pistachios. 

Not a bad combi I think. It could have been something like feta, apples and pistachios (come to think of it, it wouldn’t have been that odd either).

Rosewater Greek Yogurt Cheesecake with Rhubarb and Strawberry Compote + We live a simple life

Rosewater Greek Yogurt CheesecakeMy love for food makes me want to write about it. What makes me passionate about healthy living is the change I see in myself and my family through this journey. I had bit of a giggle though, when I realised the image I may have portrayed. 

Perhaps a mix of hippy, health conscious, passion filled foodie? Or a health freak? Either way, I want to share that eating right and moving right is not rocket science (although there is science behind it!). It is an effort. Though an effort worthwhile. It is also simple. Yes we avoid gluten, processed food and added sugar mainly. IMG_2305 (640x427)

We embrace protein, vegetables and fruits. We also adore dashes of dairy, rice and even some legumes (mmm…peanut butter) from time to time. Simply put, we listen to our bodies and eat accordingly. There isn’t any right or wrong. What we do know is that we feel the best when we eat heaps of vegetables, some meat and seafood. 

I haven’t put out my meal plan for ages but our meals typically look like this with different options:

Breakfast

2 soft boiled eggs with smoked salmon and sauerkraut. (Or if u r Asher, sometimes he wants 3 eggs)

Greek yogurt with passionfruit or blueberries with my home made granola

the boys might have my home made banana bread/loaf that I made

Asher might have avocado and banana or grilled mushrooms with avocado 

pancakes

Lunch

Whatever we had for dinner before

Afternoon tea

Chia pudding with berries or with home made granola 

handful of nuts 

or whatever I baked/make 

nearly always with my almond milk coffee 

Dinner

Roast chicken + Roast vegetables

Curry + stir fry vegetables + 6 hour slow cooked chinese clear soup of some form (radish and chinese mushrooms last night) 

Pulled pork + spag squash + roasted kale chips 

“Pad thai” Pork with kelp and zucchini noodles

Pork Hock Kale, Carrot and Capsicum Soup

Grilled fish with spinach and avocado salad 

After dinner

Fruits + tea

Dark chocolate

Whatever it is, it is just simple food. I think it is laughable that it is so simple. I find it hard to share or post my dinner ideas because they are that easy. IMG_2300 (640x427)

The other day, I made a greek yogurt cheesecake. YEP! Totally not paleo. Maybe borderline being clean but it was so yummy. I love a good cheesecake but often find them too sweet and heavy. I also like my raw desserts but I think it is bit of an overkill of nuts. I had a sense of achievement when it came out with NO cracks! 

Now, I just have to replicate this again and again!

Raw Coconut Chocolate Brownies (Raw, Vegan, Paleo, Gluten Free, Dairy Free)

He whispered “chocolate cake” the other day when I asked what would he like for morning tea. That reply reminded me of why I should not ask him what he wants but just offer him some options instead. IMG_2277 (640x427)

So we made brownies. Raw ones that goes into the food processor and he can eat via the spoonful. I made a version before using coffee but given that coffee is one that we do not want asher to try, we had to sneakily eat it. This one, was adapted so if he has a square, it would be alright. IMG_2273 (640x427)

Interestingly, it only works with coconut milk. I find that almond milk or normal milk just doesn’t give it the right texture. Perhaps coconut milk gives it a creamier taste. I had to freeze half a batch though. For many reasons including portion control and not snacking on a whole heap of them at once. The other, is that I can show Asher an empty box and said “finished” when in actually fact there is half of it left in the freezer for hubby’s snack. (sneaky sneaky!) IMG_2275 (640x427)

Blueberry Coconut Pancakes (Paleo, Gluten Free, Clean Eating, Nut Free, Dairy Free) + Asher’s list of favourite foods

  • Pancakes

  • Nuts (more on that later)
  • Mushrooms

He rattled off a list. 

Hubby was saying that was what Asher said in one of their conversations. I was impressed. Not just that he can remembers all those food items but he was able to understand the question and rattled off foods that he does get excited when they are given to him. IMG_2260 (640x427)

Pancakes are his current thing. We make pancakes mini size. My understanding is that they are similar except pikelets are thicker. Of course since we do not have flour in our pantry, we use coconut flour. After some experimentation, I like this ratio of coconut flour and eggs best. 

For some reason, Asher does not like nut butter. A pity because I LOVE THEM. I think it is the sticky feel that he isn’t a fan of. He has also grown to like nuts which is a big horror to me after reading and knowing that whole nuts are a no no to kids due to it being a possible choking hazard. It reinforces how he copies our eating habits as he knows I always have a small box of nuts in my handbag! IMG_2258 (640x427)

One of my ways of getting some great protein into him is using nut butter in pancakes. In my pantry we have jars of nut butters. Cashew, almond, ABC and dare I saw it… peanut. Yes peanut is a legume and it is not “paleo” but we love it and believe that we can have some of it if it sits ok with us. We do choose a brand without any other ingredients. 

I love these pancakes because I can make a big batch and fridge or freeze them. On my work day mornings, Asher will eat them without a fuss and they are easy to re heat. On some Fridays or Mondays, we make them together. He loves whisking the eggs and seeing me our the batter into the pan. An activity that 1) helps him to learn cooking/measuring/counting, 2) bonding between us, 3) he eats it, 4) less fuss on work mornings!

Lemon Pistachio Cakes (Gluten Free, Nut Free, Clean eating, Paleo) + Life as a working mum

IMG_2250 (640x427)My mind ticks and turns. I have this list of things running in my head all the time. 

Having said that, working 3 days seem to be working for us. We dropped some other commitments and I find that the “long weekend” I have with Asher is working. How do I know?

  • We are starting to get into the groove of weekend bulk cutting/cooking
  • I’m falling into the routine of when to do certain household chores like clothes folding and general cleaning
  • I can focus and work those 3 days, yet feel that I have time with AsherIMG_2249 (640x427)

Of course there are weeks where it feels a little more tiring than usual. Hubby commented that he notices that by Thursday, I look shattered. I may look that way but it is also a sense of relieve that I get to spend that wonderful full day with Asher on Friday. We have pj mornings where we stay in doors, get some household chores completed but we would also draw/paint or create something in the kitchen. Sometimes I would make pancakes which apparently is his favourite food at the moment! IMG_2252 (427x640)

These lemon pistachio cakes were created during one of those friday mornings. Since I love cooking and baking, I can’t help but want to involve Asher in it. Sometimes he is very enthusiastic and wants to beat the eggs up or fold in ingredients. Other times he can be curious and want to know what each item is. There are also times where he prefer to do his own thing and leave me to my own devices. 

I used almond milk but feel free to use usual milk or a water down version of coconut milk if you like. I love pistachios. In chinese they are known as “Happy Fruit”. They are pretty expensive though and I use it sparingly. IMG_2251 (640x427)

Quinoa Coconut Chocolate Bars (Clean eating, nut free gluten free) + What is your food philosophy?

IMG_2238 (640x427)When someone asks me what my food philosophy is, I struggle to come out with words to describe it. Often, I would use words such as “Paleo + principles of clean eating”. I identify with the paleo, mainly with their back to the basics way of eating. We have a lot of plant based foods at home with a healthy amount of protein. Do we indulge in rice, legumes and dairy? I would say we do. I have a greek or just natural yogurt in the morning for breakfasts, and hubby loves a few slices of cheese in his snack box. Does that make us paleo then? Perhaps not in the true sense. IMG_2235 (640x427)

Then perhaps clean eating describe us better? Not completely either. We hardly ever have oats (somehow it doesn’t sit well with us?)and we do not have legumes in every meal. How about “no sugar”? You can say that too. We have very little refined sugar in our diet. Does not mean we do not have a bite of dessert here and there. 

Imagine me in a social situation saying “cheeky paleo, clean eating, no sugar, sort of gluten free” (Insert social suicide + confusion). IMG_2232 (427x640)

Honestly, when did it get so hard? It hit me though, that labels should not define us. We do not fit into those boxes neatly. Truth is I seek recipes and look at inspirations from all the above labels. Often I would just say 

“We aim to eat very little processed food, pretty much no gluten and no refined sugar” 

or 

“We eat as naturally and plant based as possible with little processed ingredients.”

or 

” Yes we eat a lot of vegetables, meat, seafood with some cheese and yogurt” 

And I think that’s our food philosophy. 

As part of our “spring cleaning” exercise, I have been trying to keep track of ingredients and food in our fridge, freezer and pantry. I wanted to finish using half open packets of ingredients before purchasing others. Sitting at the back was my bottle of quinoa flakes. Quinoa flakes doesn’t quite fit into the “paleo” category since it is technically a pseudo grain. However, I do think that as a carb, it provides more protein than other carbohydrates sources out there. 

So in that went in a bowl together with some random ingredients. You know how yummy recipes appear through randomness? This is one of them. It was crisp, and yummy. I love the texture and the crunch! IMG_2234 (640x427)

Greek Yogurt Panna Cotta (Gluten Free, Clean Eating)

IMG_2079 (640x427)There is a myth out there that if you are eating well and exercising well, you will look good. Fundamentally, I think the concept rings true. Looking after yourself comprises more than that though. Often I have heard comments about how why should I worry about how I look or feel if I am exercising well, and eating good? 

Everyone probably knows when they feel a little “off”. That usually means you are not functioning and operating at an optimal level that you know you can. For me, I have noticed that in the past 6 months or so, I have become more sluggish with a more noticeable lower belly. I believe I have been working out well, and managing my food pretty ok. However, I know that something isn’t quite right as I’m increasingly feeling heavier, with not quite my usual self. 

A quick check with my food diary indicate that I’m sub consciously snacking more. A quick reduction of that and more food planning appears to make a difference. I still feel off though and when I finally have a chance to think through what has been going on, it hit me. IMG_2084 (640x427)

Stress. 

That quiet enemy of mine. 

Over the past few months, there has been some level of uncertainty in our household. We had a few pending changes with my work, having to make some tricky decisions around routines, my gym closing down, stress at work itself and nursing Asher through a few minor colds have threw me off. On top of hubby’s work stress, and our juggle with parenthood and sleep deprivation in general, stress have creeped up on me. For me, it was the feeling that I’m not able to be “the best I can be” and having to compromise both at home and work. I really struggle with that feeling. IMG_2081 (427x640)

That heaviness on my lower belly- I remember now. I had 3.5 years ago when I was tired and feeling over it at work. With my previous diagnosis of PCOS, my body is just simply more sensitive to cortisol. 

I’m managing better now, and needing to have quiet time more often than before. It did however, reinforce my thoughts and feelings about health, self image and food in general. It is not often as simple as “eat well and exercise well”. It is mostly, but there are certainly many factors in play. IMG_2083 (427x640)

You would have also noticed that I am introducing more dairy and some grains in our diet. Our family seem to work well with this ratio. Banning and saying ‘No” completely has never worked well in our books. That way, we get to read our bodies and judge what it can process and digest. 

I had some left over greek yogurt and did not want to waste it. Whisking some gelatine through and ta dah! A wonderful after dinner treat that tastes indulgent! IMG_2087 (640x427)

Carrot and Cauliflower Soup (Paleo, Clean Eating)

Carrot and Cauliflower SoupOne of the things I do when I’m feeling a tad overwhelmed is to de clutter and clean. It is almost like I feel calmer through the process but by knowing that the house is cleaner and toys has its place. On the other side of the coin, wanting to clean and organise is something I’m trying to not stress about because I would much rather play with trains, run around or do colouring with Asher. 

It’s the same with cooking and baking. The irony of life is that I love to create things in the kitchen. I like that when we put different ingredients together, they turn into something edible, smells lovely and warms our tummies up. As life takes over, I find myself “over thinking” meals, feeling hurried while I cook or that I have not baked for a while. Hubby starts frowning when I said “oh! Here’s 20 minutes! Let me whip something up in the kitchen for yours and Asher’s breakfast”. He was seeing signs that I’m doing that for the sake of doing rather than actually enjoying the process. IMG_2172 (640x427)

It’s one of those little life long lessons that I’m learning this year. Enjoying the process. I accept that there will be days or weeks where cooking or baking is part of what I do as life. The enjoyment bit comes after all the chores are completed and kitchen bench is wiped clean. Then there are more special times when an idea arrive for how I can put ingredients together to create something and I excitedly venture to the kitchen to see if it works together. 

I mentioned batch up cooking before and that soups is one of my favourite things to do. There is just something magical about the warmth of a bowl of soup. Maybe it is my Cantonese heritage where soups is just what we have-though probably more as a supplement than a whole meal. Or that I know I can have all the nutrients in a bowl- protein, carbohydrates and heaps of vegetables. IMG_2171 (640x427)

This soup is so simple that I wasn’t even going to take a photo of it or record what I did. I just don’t photograph or ladle soups neatly! Then my dearest hubby ladled it up ever so perfectly and even top it with crispy chorizo with precision. I was so impressed that it didn’t looked the usual hurried way that I do it usually. 

And so here it is. My Carrot and Cauliflower Soup with Crispy Chorizo. (officially making it the 4 C soup!)

Chewy Banana Date and Nut Bars + Toddler Snacks

IMG_2101 (427x640)The lure of the kids snacks section beckons. Just like snacks for adults, those little bars and crackers packed mini size is so convenient. Names with “muesli”, “yogurt”, “organic”, “whole fruit” on boxes appears to the health conscious mums and dads. 

I would admit that I have been lured into that section before. A little “organic date and dried fruit” bar sits in my handbag for those emergency times where Asher has finished what I have packed or when he rejected what I would prefer him to eat. IMG_2104 (427x640)

Those times of course increased as Asher learned that there is a possibility of having a “bar” if he says no enough. He would even go through my handbag to locate that “spare treat”. 

Enough is enough, and we decided to reduce if not eliminate purchase of those bars. If as adults we bypass the muesli bars section, why is it any different for Asher? Thankfully, we were getting a box every month or two and we reduced that to pretty much none in the past 3 months. 

So what changed? Asher is generally a good eater, so really it is about pre planning for us. His snacks are

– Bananas

– Mandarins orange

-strawberries

– Cucumber and capsicum sticks. 

-Cherry tomatoes

– Hard boiled eggs

– warm milk or babycino if we are outside

– chia seed puddings

– home made custard

– some home made baked goodies such as banana muffins or bread 

–  sulphate free ham or some smoked salmon 

– chickpeas

– popcorn 

– biltong

You will probably noticed that we haven’t shy away from dairy in his diet. Asher seems to be able to digest it so we are going with the flow with that unless we noticed otherwise. We have also allowed him to have some legumes in his diet, with chickpeas and popcorn on the list. We figured out that we would prefer to know how he respond to them than to shock his system when he gets to school and share copious amount of processed food and legumes without our knowledge. Deep down, I do not want him to grow up thinking that there food is “bad” and would prefer to educate him on what nourishes his body and some food we eat that may be more for tastes and satisfaction and they are to be kept a limit. 

Asher loves the cakes I make. However, he still associates “bars” with store bought ones and had initially refused to try any of my creations till recently. Sometimes, I just tell him it’s cake and he would happily snack on them! Toddlers! This one was a winner for him. It is probably still a little too sweet for my liking but it sure beats opening a packet snack food for him. It is slightly chewy but still easy to swallow. My proud moment is when he prefers having what I make than store bought cakes. IMG_2105 (640x427)

Asher’s 2nd Birthday Construction Theme Party (Paleo, Clean Eating)

20150725-IMG_3117 (640x427)Finally a chance to record what we did for Asher’s birthday. This year has gone particularly fast and it seems like yesterday when we had Asher’s 1st birthday bash

What a contrast a year made. Last year, Asher was shy and a little shell shocked. This year, he had fun and greeted almost everyone at the door. 20150725-IMG_3132 (640x427)

We noticed that he has an interest in all things that has wheels. With a few construction sites on the way to swimming and shops, he is frequently pointing out to us what those construction vehicles are. With that in mind, we decided to throw up a small party featuring construction! 20150725-IMG_3220 (640x427)

Last year, we threw a party and catered for around 60+ people for lunch. This year, we hosted an afternoon tea for 30 adults and 10 kids. We kept the menu simple but with a range that would hopefully suit everyone. Once again, I decided that we would have food that we would feed our family usually and avoided adding any menu items with refined sugar and minimally processed ingredients.

The best thing about it being a construction theme is that everything is as rustic as it can be. Very much our style 😉 It was definitely home made! For our decorations, we kept it simple and had balloons with a “Happy Birthday” sign across the play room. The sign was on when we hosted an early joint birthday celebrations with mothers’ group and we kept it there! We found a $7 flag banner with pictures of trucks from spot light, and got a roll of yellow/black tape as a border decoration from Bunnings. All in all, decorations plus the take home goodie bag costed us around $100.

Apple and Carrot Cake with Cream Cheese Yogurt and Dark Chocolate Coconut Ganache

I was most proud of the cake because other than the cream cheese, it was pretty much paleo, clean and healthy. With only 6 tsp of honey for a 3 layer 9 inch cake + 14 cupcakes, it tasted sweet with the apple and carrot combined. The whole cake was GONE by the end of the party. Looking at pininterest for decoration ideas, all I did was to place 3 small construction figures on the cake with some home made chocolate chia cookie crumbs for decoration. Looking at the photos, I could have done a better job with the frosting- perhaps frosting a layer first, chilling it before placing a thicker layer on it. Lesson learnt 😉 20150725-IMG_3326 (640x427)
