Peppermint Slice (Raw, Paleo, Gluten Free) + My little 15 minutes break

Peppermint SliceOne of my 2016 goals is to learn more about essential oils. So much so that I splurge and bought a kit together with a diffuser. Since I was a teenager, I have always used some form of essential oils. I love that how smell influence our feelings, and mood. I like the kind of warmness it brings to a room. While I am aware of the positive health benefits, I have not really investigate or study them. This year is the year. #self development

So with some peppermint essential oil on hand, I decided to experiment and use 1-2 drops in my peppermint slice rather than essence. My theory is that having real oils is probably more potent if not better than a possible artificially made essence? The result though was a yummy slice that is not over powering. While I’m not usually a peppermint person, I do find that less is more, before it crosses over the line from being refreshing to over powering. IMG_2835 (640x427)

One of my current things to do is to make a raw treat every few weeks and pop them in the freezer. On weeks that I’m extremely busy or when I just need a little treat at the end of the day, that is available. It is so much easier to pack this for Hubby’s snack box too- it usually thaw out a little by mid morning.

I’m learning how to allocate an afternoon a week when Asher naps to just sit and read. I’m still not overly great at this as I gravitate towards my work laptop or general packing things away. Friday afternoons though, I do find that I need to give my brain a little rest from multi tasking. My thing is to sit down with some form of reading material, berries and a cup of tea on hand. Perhaps sometimes with a mini treat like this slice. With the age of technology and multi tasking, that is a treat. Quietness and stillness. It may sound too simple but simplicity is what we need at times. IMG_2830 (427x640)

Guilt Free Time out + Powerhouse Pumpkin Slice (Paleo, Clean Eating, Gluten Free, Egg Free, Dairy Free)

IMG_2740 (640x427)Earlier in the month, hubby and I spoke about our goals for this year. We dig deep and discussed having more time together as a couple. We discussed having individual time to ourselves. We spoke about our individual journey with God and needing to dive deeper spiritually. We chatted about family time and knowing when to say no- simplifying our routine.

Time out individually, couple and as family can seem like an oxymoron. Truth me told, we need all 3. Individually and as a couple to strengthen our marriage but also to make us stronger as parents. When I asked hubby what would he like to see change. He replied “you to stress less”. That short sentence made me paused. At the bottom of my heart, I know why. When I’m less stressed, I give more. I see more and I do more. I’m kinder. I’m happier and I tend to be more present focused. IMG_2743 (640x427)

Yet on the other hand, I’m so conscious about us being an individualistic society that we need to see systemically what is required. My grandmother never had “time out” yet she had to manage. She just made do because that’s what she had to do. She did however, work closely with her large family and neighbours. She had a sense of humour. Her attitude was to do the best she can. She told me about liking what she does.

The more we see that as a problem. The more we tend to feel guilty. IMG_2739 (640x427)

The thing is, time out is a term for re charging. Those days, my grandmother’s re charge was to have a cigarette. She was cranky as and she was “scary” in terms of her temper. She took panadols to deal with the pain. She had her bad days too but had to push on. She had to do what she needed to do. Looking back, I can see why she is strong but I can also see why her struggles to look after her body optimally lead to health issues. IMG_2740 (640x427)

My re charge? to do daily devotionals more regularly. To sit and read. To be ok with taking sick leave when I am sick. To have an occasional outing with friends. And if it all falls apart at times, it is to say that’s ok and just go with it!

This powerhouse slice was invented in my kitchen when I was looking at an eggless but also less/no refined sugar alternative to bind a slice together. Often recipes call for a huge amount of rice malt/honey or brown sugar. I thought pumpkin might be an idea to add great carbs, but also a natural sweetness to it. This is more of a chewy slice rather than a crispy one. I think it is a powerhouse because it has great fats, good carbs and protein all in one. Best, it is easily portable for snacks.

Oh, what will you be doing for Australia day tomorrow? We aren’t too sure yet, but it will definitely incorporate some family time together! 🙂

HAPPY AUSTRALIA DAY FOR TOMORROW!

Salted Caramel with Nut Praline Slice (Gluten Free, Paleo, Clean eating, Raw) + Work mates

Salted caramel Praline sliceIn the kitchen of where I work has a poster near the doorway. It states what the team values.

“someone who can bake”

I love it when the team has got its priorities right. IMG_2647 (640x427)

When it became my turn to provide morning tea though, my mind races. What can I bring that could potentially be a crowd pleaser, something perhaps a little different but also refined sugar free? IMG_2649 (640x427)

I was anxious. This is a team that is used to having gorgeous home made cakes made with traditional flour and sugar. Each time, I felt tongue tied when I explain why I’m not a fan of gluten, sugar or anything refined. I was conscious it could make me stick out like a sore thumb but still wanting to stand my ground of our food philosophy.

This slice was inspired by the Merrymaker sisters’ snickers cake. My biggest take away from their recipe was the gorgeous nut praline. Starting from there, I created my layers and made it to suit my taste.

It was gone by the end of the day and that was all the confirmation I needed.

If you are looking for a cool christmas treat to bring or make, this would be a lovely one to try!IMG_2652 (640x427)

Raw Carrot Cake Bites

Raw carrot cake bitesThere are many raw treats popping up around Perth at the moment. I have my favourites- mainly those that does not use agave as a sweetener. I prefer the use of honey, rice malt, medjool dates or coconut sugar. While there are debates between the level of fructose in each kind of sweetener, I think it is best to use common sense and your taste buds to guide you. Agave does not sit well with me and neither does stevia. Personally, I think that whichever one you choose, less is more. IMG_2624 (640x427)

I love carrot cake. Maybe it is the deception of the goodness of carrots in a cake, but to me, that is comfort food. When hubby and I were in our university days, I fell terribly sick once. I hardly got out of bed and did not have appetite for any thing. Except for a big slice of carrot cake. Well, ok, that one slice was my breakfast, lunch and dinner. Fast forward to 14 years later, I still love a good slice of carrot cake. My taste buds have change of course and I’m finding most cakes are too sweet for me- to the point that I’m unable to enjoy the flavour of the cake while my tastebuds is stinging from the sugar hit. IMG_2630 (640x427)

Still, you can tell my love for it prevailed. For Asher’s full moon celebration, I made carrot cupcakes with cream cheese yogurt swirl. I did as similar layered cake for his 2nd year birthday when it was the combination of carrot and apple that won me over.

So I guess it is no surprise that I would attempt to make a raw version of carrot cake. If you follow my instagram, you probably noticed that I made one before. My experiment of using  didn’t work the way I envisioned it to be (i know..what was I thinking). This round, I combined coconut butter with coconut milk and it worked so much better. Cream cheese wouldn’t hurt too I am sure. IMG_2625 (640x427)

Moroccan Mixed Nuts and Coconut Bars (Paleo, Clean Eating, Gluten Free) + My thoughts on snacks

IMG_2554 (640x427)I can be a mindless snacker. A handful of this and a handful of that usually adds up to more than what I like to admit what I can eat. I’m a lot more conscious about portion control these days. Making sure I have a small container of nuts rather than eating out of a packet. Spooning yogurt into my bowl rather than eating it from the tub. Things like that matters. IMG_2549 (640x427)

I find that I can go without a snack between breakfast and lunch on most days, unless I have big workout the evening before. However, come 4pm, I’m usually wanting a snack of some sort. Ideally to fuel me before my workout at around 5:30pm. Some of my favourite snacks are

  • coffee
  • 1/2 cup of chia pudding with blueberries
  • 100 grams yogurt with some of my granola or coconut flakes
  • a banana muffin
  • a banana with nut butter
  • handful of nuts, and some cheese
  • A few bliss balls if I do make them
  • Few pieces of roast chicken
  • Smoked salmon and cheese
  • Vege sticks- Carrot, cucumber, celery and capsicum

Sometimes they are a combination of above. IMG_2552 (640x427)

My hubby though, like to keep his snack box handy at work. While he packs whatever that I make, I like to surprise him from time to time with a savoury item. I wouldn’t say they are the prettiest of the snacks and they do crumb quite easily. I see those crumbs as bonus though. This is morish and the crumbs are great with ice cream. Or in my mouth.

Banana Tahini Mousse Slice (Raw, Vegan, Paleo, Gluten Free, Clean Eating) + Thanks mum and dad!

Banana Tahini Mousse SliceIt’s nearly the end of OCTOBER! Which means I’m turning another year older soon. I honestly feel that this year has gone so quick. A blink and we are seeing Halloween and christmas decorations up.

Since having Asher, I have a greater appreciation of birthdays. Being an only child, it felt like birthdays were all about me. It isn’t. My poor mother had to endure many hours of labour, and having to give birth to me by herself without my dad or family members around. She had no pain relief, and after that, her baby was taken away to the nursery. She had to ask the nurse to bring me to her. Then it was the recovery which wasn’t easy either. IMG_2371 (640x427)

The option of not working was not there. Mum returned to work within 3 months of having me. She gave up an opportunity to pursue her degree as I was too young. She worked shifts and continued that till I was in primary school. I could still remember waiting at operating theatres while she was on call. I was fascinated by the ins and outs, and would often had a bag (?!) of books with me- reading till mum was ready to come get me.

I was under the care of my grandmother till I was 16 years old. There was 1 break (when I was 4-5 years old) but the best care was still with my grandmother. I stayed with my grandmother for quite a few years; returning to my parents’ household on weekends. I saw my parents nightly for dinner and homework tuition. IMG_2369 (640x427)

I count myself really blessed because I had 3 very capable and hardworking women as my role models. Three because my aunty was still staying with us when I was a child. Everyone lend a helping hand and I grew up surrounded by family. I witnessed how my mother and grandmother worked hard for the family. My grandmother was a networker and I recall she seem to know everyone in the neighbourhood and was able to obtain casual jobs for cash. She was very resourceful. My mother did return to University and completed her degree. She moved into more specialised nursing but yet always seem to prioritised and gave me time. I recall having lunch dates with mum on Sundays where we enjoyed mushroom soup at Delifrance (and my tuna croissant!) Together, the women taught me how to give, love and work hard.

Over the years, I have a great relationship with my mother. She is one I count on to have a frank conversation with. She provides me with down to earth advice. She is present. We are great shopping partners too- it is not rare that we exit a shop buying the same pair of shoes in different sizes (The sales girls were very amused especially when my grandmother was alive and 3 of us loving our shoes). She gave up time and money to be with me when I had Asher. IMG_2368 (640x427)

Then of course I have my father. My dad’s patience amazes me. He has this quiet calmness to him that never fails. When he retired, he said all he wants is to be at home because he spent his life working and not being there. His heart is always with his family. He taught me to persist on- even when the going gets tough. He helped me dream big and always encourage me to reach for the stars even when I do fall on the fluffy clouds. It was he who place the bar up high when it came to my education. He never compromise and told me I would complete my education, reaching post graduate levels (Something that is rare and almost never encouraged during his time since I am a girl).

So on my week of my birthday. I want to thank my parents who always shower me with unconditional love and sacrifice. Many times I have erred and have come across as insensitive- that I do apologise. We are one family and I’m blessed to be your daughter.

IMG_2374 (640x427)In celebration, I was inspired and wanted to experiment with tahini more. Chris from Tales of a Kitchen made an awesome Triple Tahini Fudge which I replicated. I was so pumped by her that I made this. So here is a smooth Banana Tahini Mousse Slice for us. I promise I will make this again when my parents are here. I miss you guys- especially my coffee dates with mum.

Raw Coconut Chocolate Brownies (Raw, Vegan, Paleo, Gluten Free, Dairy Free)

IMG_2271 (427x640)So Asher discovered chocolate.

He whispered “chocolate cake” the other day when I asked what would he like for morning tea. That reply reminded me of why I should not ask him what he wants but just offer him some options instead. IMG_2277 (640x427)

So we made brownies. Raw ones that goes into the food processor and he can eat via the spoonful. I made a version before using coffee but given that coffee is one that we do not want asher to try, we had to sneakily eat it. This one, was adapted so if he has a square, it would be alright. IMG_2273 (640x427)

Interestingly, it only works with coconut milk. I find that almond milk or normal milk just doesn’t give it the right texture. Perhaps coconut milk gives it a creamier taste. I had to freeze half a batch though. For many reasons including portion control and not snacking on a whole heap of them at once. The other, is that I can show Asher an empty box and said “finished” when in actually fact there is half of it left in the freezer for hubby’s snack. (sneaky sneaky!) IMG_2275 (640x427)

Raw Mocha Brownies (Gluten Free, Raw) + Friendships

My quest for brownies cIMG_2095 (640x427)ontinue. This time round, I was inspired when I stopped by at our local cafe and they had a raw brownie on their shelves. It featured walnuts and my brain started whirling. Upon reaching home and having Asher in bed for a nap, I placed some ingredients in a food processor and ta dah, a raw brownie was formed.

I’m starting to read and look into raw foods. I like the idea of raw desserts. Beside it being nutrition dense, it is usually simple and require a lot less equipment than traditional baked goods. The only down side is that I noted a lot of recipes used copious amount of dates which can quickly add up in sugar content. Dates might be good for you but too much is not necessary a good thing either.

IMG_2089 (640x427)Many times, I treasure friendships around us. To me, friendship is a choice. You make that commitment and decision to have a relationship with another person that is not your family or your partner. You laugh through good times and share through bad times. Ever since Asher arrived, I have been very blessed with a few close girl friends who share parenthood journey as well. Open conversations about everything, sharing our worries and concerns without worrying about judgement because let’s face it, it can be pretty judgemental out there!

With these girls, I am able to open my heart (and they to me too hopefully). Allow myself to vent and to gain perspectives. There are times when I could be in a tunnel and not see why things could be occurring. They were able to embrace me- and my quirky ways when it comes to food, fitness and lifestyle choices.

A mug of coffee, a kind word and some raw chocolate brownies. That’s the way we roll as friends. IMG_2093 (640x427)

Raw Tahini Caramel Slice (Paleo, Clean Eating, Dairy Free) + Bundle up Time Management?

Raw Tahini Caramel SliceBundle up time management. Have you heard of that before?

The other day, hubby and I had this discussion about managing our time more efficiently. He quizzed me on how do I manage to get things done with Asher hanging around my ankles, yet being able to make sure dinner is prepared and Asher has his attention?

Truth is, sometimes I don’t get it all. Most days though, it just come naturally to me that as I am playing with Asher, I teach him to pack an item away before taking another out. That usually works out to slightly less mess. Of course, there are times when I let him have free rein and we have a lego galore day on the floor. IMG_1955 (640x427)

Then we have cooking. I usually cut most of my vegetables a day or 2 in advance. My reasoning is that I’m already cutting, so why not just spend the extra 10-15 minutes to prep the rest of the vegetables. I do not have to take the cutting board out twice, plus I do not have to thin about it for another day or so. Cooking is so much easier when all items are already cut- I do not have to be afraid of Asher reaching out for the knife, and he can simply sit on the counter top while I start my cooking. He would even help stir the pot with supervision.

That was when he said… “mmm..bundle up time management”! You bundle things up to do so that there is less to be done. It frees up mind space, and it’s using each task more efficiently.IMG_1954 (640x427)

I have not really thought about that before. The same goes with tidying. I’m walking pass the bench, so why not just grab the dirty tea towel and place it in the laundry? How about I put that cup away since I’m passing by that table. Hubby said he would have just walked past- and would not have even see the cup (that he left!). IMG_1952 (640x427)

Is there such a thing I wonder? Or is it a natural thing that women and mummies tend to do?

There has been an abundance of cafes serving up raw desserts lately. I walked into a rather famous on at Mt Lawley one day and attempted their salted caramel tahini slice. While it is of a generous portion, both hubby and I agreed that it was wayyy to sweet and probably has agave in it. We are not big fans of agave at all! That however, gave me an idea to make my own tahini caramel slice. It was much less sweet and the tahini provided a creamy texture.

Dark Chocolate Hazelnut Tart + Reconnection in a Marriage

Dark Chocolate Hazelnut TartHave you ever have those moments in your marriage that you appear to be travelling on the same page, but really you are going in opposite directions?

A friend attended a wedding recently. In the midst of our happy conversation, I recall moments of our weddings, attendance of friends’ weddings and being part of the bridal party. We are at the age where we have witnessed quite a few of our friends getting hitched. We laughed a lot, danced and even shed a few tears at some of these unions.

A wedding is not a marriage. Marriage that comes after the celebration is the real test. Marriages go through their developmental stages of changes. Adjusting to being newly weds, negotiating families dynamics, readjusting when a child arrive… Indeed there are so many stressors when a child arrive. IMG_1888 (640x427)

Unfortunately where we have been in happy parties, we are also aware of unions that are at the risk of being dissolved. Tears, anger, frustration and betrayal. They make us realise how vulnerable a marriage is.

Those moments where hubby and I are travelling in opposite directions often leave warning signs. Exhaustion, one of us being sick, Asher being unwell, a conversation did not involve us or each other but rather the everyday routine. While we can be in synch, we became out of synch. It doesn’t feel like we are in a team anymore, but rather we are just existing in our everyday life. We start to do our own checklist of tasks, but neglect to see what each other needs. IMG_1891 (640x427)

One thing we have learned, is to not leave these not of sync moments for too long. We learned that it is inevitable that moments like that will occur. I will be lying to say we never have those days. The reconnection bit is hard but needed.

Sometimes, all we need is a good chocolate tart, hot cup of tea and some music. Perhaps a long walk or time set aside to have a proper conversation on what happened. Other times, the build up becomes an argument. Over small things. Another warning sign that shock us into taking action. I needed to calm down, and hubby went out to grab some errands. Then he returned with a coffee cup and suddenly, it all seems better. The act of care. It says “I’m in this” and nothing else but us matters again. IMG_1889 (640x427)

I love how this tart turned out because I finally nailed the pastry! It was easy to remove and has a melt in your mouth texture. Turns out less is more and it worked! Happy moment. Less learnt- simplicity works the best.
