Raw Carrot Cake Bites

Raw carrot cake bitesThere are many raw treats popping up around Perth at the moment. I have my favourites- mainly those that does not use agave as a sweetener. I prefer the use of honey, rice malt, medjool dates or coconut sugar. While there are debates between the level of fructose in each kind of sweetener, I think it is best to use common sense and your taste buds to guide you. Agave does not sit well with me and neither does stevia. Personally, I think that whichever one you choose, less is more. IMG_2624 (640x427)

I love carrot cake. Maybe it is the deception of the goodness of carrots in a cake, but to me, that is comfort food. When hubby and I were in our university days, I fell terribly sick once. I hardly got out of bed and did not have appetite for any thing. Except for a big slice of carrot cake. Well, ok, that one slice was my breakfast, lunch and dinner. Fast forward to 14 years later, I still love a good slice of carrot cake. My taste buds have change of course and I’m finding most cakes are too sweet for me- to the point that I’m unable to enjoy the flavour of the cake while my tastebuds is stinging from the sugar hit. IMG_2630 (640x427)

Still, you can tell my love for it prevailed. For Asher’s full moon celebration, I made carrot cupcakes with cream cheese yogurt swirl. I did as similar layered cake for his 2nd year birthday when it was the combination of carrot and apple that won me over. 

So I guess it is no surprise that I would attempt to make a raw version of carrot cake. If you follow my instagram, you probably noticed that I made one before. My experiment of using  didn’t work the way I envisioned it to be (i know..what was I thinking). This round, I combined coconut butter with coconut milk and it worked so much better. Cream cheese wouldn’t hurt too I am sure. IMG_2625 (640x427)

Strawberry Chai Jam with Coconut Chia Pudding + Strawberry Crumble Tarts (Paleo, Gluten Free, Clean Eating)

IMG_2474 (640x427)Are you having strawberry fever yet? I know I am. Around two months ago, a good friend went to a strawberry farm and brought back around 4 kg worth of strawberries for us. Freshly picked. It was epic awesome. We went strawberry picking in Tassie as well and was so impressed with their spray free strawberries. Asher was even more impressed by how he can pick and eat them. IMG_8153-2

I love strawberries for many reasons. I like the texture, its’ sweetness, tang and of course one of the most nutrient dense food around. The are probably the lowest sugar/frutose fruits but are filled with phytonutrients and antioxidants. IMG_2466 (640x427)

With the amount of strawberries, I made this chai jam that was perfect for our coconut chia pudding that I made for hubby’s breakfast. Chia Jam is awesome because they are so quick to whip up, using chia seeds as the thickening agent.IMG_2465 (640x427)

 I usually have a few tbsp of chia pudding pre work out too. For a toddler like Asher, he would have his chia pudding topped up with 1/2 cup of milk (with 1 tsp of chia seeds). There are times I give him cows milk or almond milk for variety. While chia is full of omegas, fibre and are “good for you”, I think there can be too much of a good thing especially for a toddler and choose to dilute chia seeds with more liquid for easier digestion. IMG_2461 (640x427)

[yumprint-recipe id=’88’] IMG_2476 (640x427)With the little amount of strawberry jam left, and some miracle left over tart (see previous post on my savoury tart) pastry in my fridge, a tart is inevitable. Now, this pastry recipe is a little vague because I used left over pastry from my silver beet tart. One thing with the jam though. I forgot that we are essentially double cooking it when the crumble tart enters the oven. I felt that the strawberry flavour was there but there was a missing strawberry freshness to it. Next time, I would add a few slices of fresh strawberries on top of the jam for that freshness. Strawberry Crumble Tart

Banana Tahini Mousse Slice (Raw, Vegan, Paleo, Gluten Free, Clean Eating) + Thanks mum and dad!

Banana Tahini Mousse SliceIt’s nearly the end of OCTOBER! Which means I’m turning another year older soon. I honestly feel that this year has gone so quick. A blink and we are seeing Halloween and christmas decorations up.

Since having Asher, I have a greater appreciation of birthdays. Being an only child, it felt like birthdays were all about me. It isn’t. My poor mother had to endure many hours of labour, and having to give birth to me by herself without my dad or family members around. She had no pain relief, and after that, her baby was taken away to the nursery. She had to ask the nurse to bring me to her. Then it was the recovery which wasn’t easy either. IMG_2371 (640x427)

The option of not working was not there. Mum returned to work within 3 months of having me. She gave up an opportunity to pursue her degree as I was too young. She worked shifts and continued that till I was in primary school. I could still remember waiting at operating theatres while she was on call. I was fascinated by the ins and outs, and would often had a bag (?!) of books with me- reading till mum was ready to come get me. 

I was under the care of my grandmother till I was 16 years old. There was 1 break (when I was 4-5 years old) but the best care was still with my grandmother. I stayed with my grandmother for quite a few years; returning to my parents’ household on weekends. I saw my parents nightly for dinner and homework tuition. IMG_2369 (640x427)

I count myself really blessed because I had 3 very capable and hardworking women as my role models. Three because my aunty was still staying with us when I was a child. Everyone lend a helping hand and I grew up surrounded by family. I witnessed how my mother and grandmother worked hard for the family. My grandmother was a networker and I recall she seem to know everyone in the neighbourhood and was able to obtain casual jobs for cash. She was very resourceful. My mother did return to University and completed her degree. She moved into more specialised nursing but yet always seem to prioritised and gave me time. I recall having lunch dates with mum on Sundays where we enjoyed mushroom soup at Delifrance (and my tuna croissant!) Together, the women taught me how to give, love and work hard. 

Over the years, I have a great relationship with my mother. She is one I count on to have a frank conversation with. She provides me with down to earth advice. She is present. We are great shopping partners too- it is not rare that we exit a shop buying the same pair of shoes in different sizes (The sales girls were very amused especially when my grandmother was alive and 3 of us loving our shoes). She gave up time and money to be with me when I had Asher. IMG_2368 (640x427)

Then of course I have my father. My dad’s patience amazes me. He has this quiet calmness to him that never fails. When he retired, he said all he wants is to be at home because he spent his life working and not being there. His heart is always with his family. He taught me to persist on- even when the going gets tough. He helped me dream big and always encourage me to reach for the stars even when I do fall on the fluffy clouds. It was he who place the bar up high when it came to my education. He never compromise and told me I would complete my education, reaching post graduate levels (Something that is rare and almost never encouraged during his time since I am a girl). 

So on my week of my birthday. I want to thank my parents who always shower me with unconditional love and sacrifice. Many times I have erred and have come across as insensitive- that I do apologise. We are one family and I’m blessed to be your daughter. 

IMG_2374 (640x427)In celebration, I was inspired and wanted to experiment with tahini more. Chris from Tales of a Kitchen made an awesome Triple Tahini Fudge which I replicated. I was so pumped by her that I made this. So here is a smooth Banana Tahini Mousse Slice for us. I promise I will make this again when my parents are here. I miss you guys- especially my coffee dates with mum.

Raw Coconut Chocolate Brownies (Raw, Vegan, Paleo, Gluten Free, Dairy Free)

He whispered “chocolate cake” the other day when I asked what would he like for morning tea. That reply reminded me of why I should not ask him what he wants but just offer him some options instead. IMG_2277 (640x427)

So we made brownies. Raw ones that goes into the food processor and he can eat via the spoonful. I made a version before using coffee but given that coffee is one that we do not want asher to try, we had to sneakily eat it. This one, was adapted so if he has a square, it would be alright. IMG_2273 (640x427)

Interestingly, it only works with coconut milk. I find that almond milk or normal milk just doesn’t give it the right texture. Perhaps coconut milk gives it a creamier taste. I had to freeze half a batch though. For many reasons including portion control and not snacking on a whole heap of them at once. The other, is that I can show Asher an empty box and said “finished” when in actually fact there is half of it left in the freezer for hubby’s snack. (sneaky sneaky!) IMG_2275 (640x427)

“Red Velvet” Cupcakes with Cream Cheese Yogurt Frosting (Nut Free, Clean Eating, Gluten Free)

IMG_2219 (640x427)I hand these little cupcakes out to Asher’s educators on his birthday.  I was so happy with my experimentation that I made another batch for some friends. They look so decadent and pretty. I wait for their response. “Oh, it tastes like a normal cupcake” they say. 

Healthy baking can be delicious and pretty too. People often associate healthy and clean eating as lettuce leaves with plain grilled chicken breasts.  I like to challenge that for sure. IMG_2216 (640x427)

Truth be told I have not made cupcakes since Asher was 1 month old (When I made carrot cupcakes with cream cheese frosting). I’m not a great froster and so I never quite had the patience for them. This time round, I was “in the zone” and actually thought to myself that I could do this! 

These red velvet cupcakes are made with beetroot and coconut flour. Somehow, I managed to find the ratio that works. It isn’t too eggy, and it looks and tastes like cake. My only issue is that I’m used to not having much sweetness now, hence mostly I’m good with the sweetness coming from the beetroot. The cacao though does gives it a bitter after taste so I have to consciously add 2-3 tbsp of honey more than what I would do usually to give it a lift. Still, 3 tbsp + sweetness from beetroot for 12 cupcakes is pretty good I say. IMG_2220 (640x427)

Now I would be the first to admit that the frosting is not paleo. It has cream cheese AND yogurt in it. You can choose to make a butter cream frosting, or whip up some coconut cream one. Or you can do a double chocolate by melting some dark chocolate with coconut milk to make a ganache! Now that would be decadent. IMG_2221 (640x427)

Greek Yogurt Panna Cotta (Gluten Free, Clean Eating)

IMG_2079 (640x427)There is a myth out there that if you are eating well and exercising well, you will look good. Fundamentally, I think the concept rings true. Looking after yourself comprises more than that though. Often I have heard comments about how why should I worry about how I look or feel if I am exercising well, and eating good? 

Everyone probably knows when they feel a little “off”. That usually means you are not functioning and operating at an optimal level that you know you can. For me, I have noticed that in the past 6 months or so, I have become more sluggish with a more noticeable lower belly. I believe I have been working out well, and managing my food pretty ok. However, I know that something isn’t quite right as I’m increasingly feeling heavier, with not quite my usual self. 

A quick check with my food diary indicate that I’m sub consciously snacking more. A quick reduction of that and more food planning appears to make a difference. I still feel off though and when I finally have a chance to think through what has been going on, it hit me. IMG_2084 (640x427)

Stress. 

That quiet enemy of mine. 

Over the past few months, there has been some level of uncertainty in our household. We had a few pending changes with my work, having to make some tricky decisions around routines, my gym closing down, stress at work itself and nursing Asher through a few minor colds have threw me off. On top of hubby’s work stress, and our juggle with parenthood and sleep deprivation in general, stress have creeped up on me. For me, it was the feeling that I’m not able to be “the best I can be” and having to compromise both at home and work. I really struggle with that feeling. IMG_2081 (427x640)

That heaviness on my lower belly- I remember now. I had 3.5 years ago when I was tired and feeling over it at work. With my previous diagnosis of PCOS, my body is just simply more sensitive to cortisol. 

I’m managing better now, and needing to have quiet time more often than before. It did however, reinforce my thoughts and feelings about health, self image and food in general. It is not often as simple as “eat well and exercise well”. It is mostly, but there are certainly many factors in play. IMG_2083 (427x640)

You would have also noticed that I am introducing more dairy and some grains in our diet. Our family seem to work well with this ratio. Banning and saying ‘No” completely has never worked well in our books. That way, we get to read our bodies and judge what it can process and digest. 

I had some left over greek yogurt and did not want to waste it. Whisking some gelatine through and ta dah! A wonderful after dinner treat that tastes indulgent! IMG_2087 (640x427)

Macadamia Rhubarb Strawberry Crumble (Gluten free, clean eating)

IMG_2115 (640x427)In the month of mid June to July, I realised that I have been snacking unconsciously and eating more than what I would have usual. My body being quite sensitive, reacted quite quickly. I was feeling sluggish and heavy. Since recording what I have been eating for a few weeks, and re adjusting to smaller portions and conscious snacking, I’m back on track. 

It is winter though, and those warm desserts can be quite alluring. I do not like operating in a “deprivation” framework and often like to focus on what we can have and enjoy. When a cold night calls, I’m often snuggle up on the couch with a throw rug and a hot cup of white tea (or red tea), perhaps a mug of cacao, few pieces of dark chocolate and if I want more…. some form of dessert. IMG_2117 (640x427)

This crumble was one of them. I spotted some gorgeous red rhubarb at the local markets. At home, I diced the stalks, placed it in an oven proof dish with squeeze of orange juice and strawberries. As they cooked to perfection in the oven, I combined coconut flakes, drizzle of oil, macadamia nuts. That went on top and browned for a few minutes. 

A simple dessert that is so simple that I’m not sure if it counts as a recipe. Sometimes that is all we need to round the night off. A warm dessert and a hot cup of tea. Those simple life treasures is what I appreciate. Stillness and quietness of the night. IMG_2116 (640x427)

Lemon and Passionfruit Slice (Raw, Paleo, Gluten Free, Clean Eating, Dairy Free)

IMG_2174 (640x427)When we decided to build our home, I was more interested in the indoors bit than the outdoors. Hubby who lived in Malaysia growing up saw that as my city influence-given that I have stayed in small apartments during most of my childhood. I’m not a big fan of gardening, though I love what the garden can produce. He on the other hand, loves greenery and insisted on having a backyard. 

I wasn’t keen at first. I said gardening would take up a lot of our time-something we tend to struggle with. I would much rather cook and bake than do weeding! He convinced me, painting a picture of a herb patch, citrus trees and even rose bushes for my grandmother. IMG_2179 (427x640)

It has been 2 years since we moved into this home. I have to give him credit that the garden is a winner when grandmother was alive. My side of the family helped with the planting of 3 fruit trees and enjoyed spending time in the alfresco area. My dad in particular didn’t even mind the weeding and helped hubby out with some reticulation problems. The herb garden was mostly a success with Asher helping us collecting some herbs for cooking. That is still one of my favourite bit of the garden. Asher loves watering it. The fact that he is learning more about food appeals to me too. Lemon and Passionfruit Slice

We have two rose bushes. One that we planted in memory when grandmother passed away. It sits directly opposite my kitchen sink where every day, I look at it and think of her. The other was given to us by a friend at her 1 year death anniversary for similar reasons. If only we managed to plant more when she was alive. 

The fruit trees? We harvested two mandarins and finally this year, LEMONS! That was really exciting. Fresh lemon juice for the morning and heaps of lemons in our cooking and baking. I wanted to squeeze the juice and freeze it but I was overzealous in our lemon creations and was left with … none. IMG_2181 (427x640)

I made this Lemon and Passionfruit Slice for our joint mother’s group birthday celebration. I figured out that more liquid and longer time in the food processor made this slice super creamy without the cream. A very refreshing raw dessert.

Fudgy Avocado Brownies (Paleo, Gluten Free, Clean Eating)

IMG_2016 (427x640)As you may be aware. The first thing I ever made that was a success were brownies. Over the years when I was in university, brownies were my thing. A gift for my lecturers, birthday parties, work morning tea. I celebrated with brownies. I have of course added twists and have made version 2 which is a flourless one and 3 which is a healthier version before. IMG_2012 (640x427)

Most healthy versions of brownies never quite cut it with me. Not fudgy enough or perhaps too cakey. So when I come across the use of avocado in brownies, I had to try it.  Afterall, one of my favourite healthy after dinner treat is a avocado chocolate mousse. They are not the usual brownies of course. The fudgy factor though is there. I love the rich and creamy cacao taste of this little bite. It’s so good that I reckon I could just eat it raw without baking. That spells danger. IMG_2011 (640x427)

I would even think that as this can be made with a nut free butter like a Sunbutter or a combination of that with coconut butter for allergy friendly schools. One thing I can see with this recipe is that it uses a whole cup of nut butter which, while it is great source of protein, it is easy to overeat! I deliberately cut it in small bite sizes and savour each bite. In the future, I would play around with reducing the nut butter and a tbsp of coconut flour perhaps. I have also spotted some sweet potato brownies recipe by a few paleo authors and am keen to experiment with that too. IMG_2010 (640x427)

If you think that the avocado taste is too strong, I suggest adding more honey which a friend of mine did, more cacao or a combination of both. It is quite a forgiving recipe, hence you can play around with the ratios as you blend it up in the food processor.

Mini Orange Coconut Cakes (paleo, gluten free, nutfree, dairy free) + How I survive early mornings and late nights

Orange Coconut CakeYou know those days where setting the alarm is important? It hardly exists in my household anymore. Asher loves waking up early in the mornings. We rejoiced when he wakes between 6-7am. Sometimes it is between 5:30-6:30am. It’s what makes parenthood interesting. You never know what time you will wake. Take this morning, he woke up at 6:50am aka meaning I had a SLEEP IN! How good was that! 

I’m finding it really tricky to sleep earlier though. Since starting work, those quiet evenings when Asher sleeps becomes even more precious. He usually goes to bed between 7:30-8pm. It does varies depending on his nap times and if we are out on weekends. Generally though, he is asleep by 8:30pm latest. Hubby and I would then clean up, prep for the next day, put a load of washing on and watch an episode of Masterchef with a bowl of fruits and hot tea. That is when we attempt to have a decent conversation and plan for the weekend or whatever event we have on. That means we try to get to bed by 11pm, though realistically, it’s closer to 11:30pm. 

IMG_1929 (640x427)So if we have sleep between 11:30pm-5:30am, that’s around 6 hours. Give and take an additional hour or so. Hey, pretty good right? Not on the nights where Asher has difficulty settling or falls sick. On average, Asher will wake once a night. Most nights, it doesn’t  take long to re settle him. He just want to know we are around and nearby. A comfort hug and light strokes and he is back down in 15 minutes. Other nights, we have NO idea why he is up. We would have gone through the list and he would still be upset. It could be toddler nightmares or teething. Whatever the case is, we try to comfort him the best we can by being present. 

So really? On some nights, one of us will have less than 5 hours of sleep. Maybe 3-4 hours. How do we manage to get through the day?IMG_1925 (640x427)

– Hubby and I try to take turns. We learned that it is easier to take turns by days. So at least one of us have a decent night sleep on some nights. This usually makes the next night more bearable.

– Coffee. I would need a shot by 4pm. I try to delay drinking coffee till the late afternoon when I really need it. Some people struggle with sleep having coffee so late in the day. I need it to stay awake till 11pm!! hubby would have his earlier in the morning though. 

– We have a mattress in Asher’s room. Some nights, it is just easier to sleep there or with him on the mattress. That buys us an additional hr or two sleep. Plus it’s more comfortable than sleeping on the carpet. 

– Eat well. I cannot stress how important nutrition is. Just keeping vegetable sticks, nuts, protein like eggs around helps to keep the sugar level balance and not range for sweets when the 3pm slumps hits. Also, breakfast. If I have to wake at 5:30am, give me my food! 

– I may look like a zombie at the gym at 5:30pm but I always feel better after a workout. That endorphins hit is so good…

– First thing I do when I wake up is to hit the loo, brush my teeth and wash my face. Part of my morning routine is put on make up and going out clothes. That helps me feel a little more human and look slightly more presentable. 

– Keep busy. I try not to think about how little or much sleep I have. I just have to keep moving and doing things. 

– On days that I do not work and put Asher down for a nap, I might rest with him. It might be between 10-20 minutes but it makes a big difference. 

– Having something positive to look forward to. On weekends, we have family lunches. A good coffee always makes me happy. And a trip to the farmers markets. 

I like to think that I can be more productive if I wake earlier. On my work days, I tell myself that I get an extra 30 minutes or so with Asher before work begins. On my non-work days,  I might do a quick vacuum around the house before our swimming class. I might schedule in an activity with Asher. Like these cakes for instance. Asher has developed a curiosity  around what we do in the kitchen. Plus he loves oranges. IMG_1924 (427x640)

Using the pressure cooker, I steamed the orange for 15 minutes while he ate breakfast. Then all I did was to sit him on the bench, and get him to tip measured out ingredients into the food processor. He watches it whirls while giving me a cuddle (It still scares him a little!), and then we try spooning it to the little cups. I place it in the oven, and tell him that he made it. He patiently waited for those cakes to come out of the oven, cool and had one before his swimming class. Then he looked at me and said “asher made” with that bright look in his eyes.

That made me melt a little. Perhaps that 5:30am wake up was worth it (who am I kidding…?!?)
