Blueberry Ricotta Pancakes (Nut Free, Gluten Free, Clean Eating)

Blueberry Ricotta PancakesYes. Another pancake recipe. We pretty much make pancakes on a fortnightly to a weekly basis. Asher really likes his pancakes! Blueberries of course is another favourite of us. IMG_2745 (640x427)

The funny thing is that Asher does not seem to like cheese (or nut butter!?!) by itself. He is generally a great eater so I put it down to personal preference and how that might change as he gets older. We aren’t too fussed about dairy as it does have inflammatory properties, and being Asian just means Asher might be more prone to lactose intolerance later down his life. For us though, it is about teaching him that just because you don’t like one form of food doesn’t necessarily means another form isn’t delicious. 

From time to time we have ricotta in the house. This time round, we included ricotta in to our pancakes. The result was smooth and creamy. He scoffed it down in on time. These are nut free too which will be a handy thing to have in the future for school I’m sure! IMG_2744 (640x427)

Pumpkin Pancakes (Paleo, Gluten Free, Clean eating) + Update on views of fitness and food

Pumpkin PancakesIt’s nearly the end of the year. I thought I would like to update myself (and if you are reading) about my thoughts on fitness, food and body image. I have written about scales talkfood judgement, and also my fitness routine. Things have changed since Feb 2015! 

There are many reasons. One is that I truly believe fitness is a journey. It does sound cliche, but the more I work out, the more I’m realising other reasons to do so. Yes, it started off as aesthetics, then it was the fear of returning to where I was. Gradually it became a competition with myself on how far I can push my body. Now, I’m at a space where I work out to feel good, be healthy, have energy, be strong and have fun. Do I want to pump out more pull ups? Oh you bet I do! Do I want to run faster, yep or tackle heavier weights? it’s there.

I have also learned though, that it is ok to take breaks. I used to feel SO bad about missing a session. Now, if I missed one, over the weekdays, I might choose to let it go, do something on my usual rest day, or turn on a HITT session. A good stretch or remedial massage is a fitness session too. 

Another big change is that my really really awesome gym closed in July 2015. I.grieved.big.time. Thankfully, the people that I work out together felt the same way and so we decided to do something about our grief and channelled it into our own workout sessions. We even have a name! I just have to remember it. 

I have a workout buddy now too. We decided that we want to continue the momentum and practice kettle bells. We bought some equipment and transformed one of my living areas into a home gym. 

My current work out routine

Monday- Metcon

Tuesday- Weights/Kbs

Wednesday- Boxing

Thursday- HITT or KBs

Friday- Rest day

Saturday- boxing

Sunday- Rest day 

Active rest days are the best. I walk, swim, run around, dance with Asher or do a BIG stretch. 

The biggest change of course is probably my mindset. 

I tracked food in June after discovering a couple of my pants became a little too tight (aka bursting) for my liking. I turned a notch down in snacking and returned to just sensible 3 meals with a snack before workout. I practiced being kind to myself and slip a coffee when I need or feel like one instead of berating myself for too much caffeine. I savoured dark chocolate and ate my berries. I continued to do what I used to do- which is to ask myself is the food item for pleasure or nourishment or both. Enjoying my food rather than freaking out.

I stopped weighing myself. 

Surprise surprise. My pants fit, I’m feeling better and I actually conquered turkish get ups. Plus hit a few PB with lifting weights. 

So what’s next?

  • Install a pull up bar
  • Continue to practice sensible eating. 
  • Continue with weights and hopefully able to deadlight heavier 
  • Be kind to self

Speaking of kindness, we are not in the US and I am more than aware that pumpkin season is sort of over. Here in my household though, it feels like pumpkin season is weekly. Asher is into pancakes and here is my attempt to include in a good dose of antioxidants and beta-carotene  in him. A dollop of coconut yogurt or yogurt completes it. Or if you are Asher, plain is the best way.

Raw Carrot Cake Bites

Raw carrot cake bitesThere are many raw treats popping up around Perth at the moment. I have my favourites- mainly those that does not use agave as a sweetener. I prefer the use of honey, rice malt, medjool dates or coconut sugar. While there are debates between the level of fructose in each kind of sweetener, I think it is best to use common sense and your taste buds to guide you. Agave does not sit well with me and neither does stevia. Personally, I think that whichever one you choose, less is more. IMG_2624 (640x427)

I love carrot cake. Maybe it is the deception of the goodness of carrots in a cake, but to me, that is comfort food. When hubby and I were in our university days, I fell terribly sick once. I hardly got out of bed and did not have appetite for any thing. Except for a big slice of carrot cake. Well, ok, that one slice was my breakfast, lunch and dinner. Fast forward to 14 years later, I still love a good slice of carrot cake. My taste buds have change of course and I’m finding most cakes are too sweet for me- to the point that I’m unable to enjoy the flavour of the cake while my tastebuds is stinging from the sugar hit. IMG_2630 (640x427)

Still, you can tell my love for it prevailed. For Asher’s full moon celebration, I made carrot cupcakes with cream cheese yogurt swirl. I did as similar layered cake for his 2nd year birthday when it was the combination of carrot and apple that won me over. 

So I guess it is no surprise that I would attempt to make a raw version of carrot cake. If you follow my instagram, you probably noticed that I made one before. My experiment of using  didn’t work the way I envisioned it to be (i know..what was I thinking). This round, I combined coconut butter with coconut milk and it worked so much better. Cream cheese wouldn’t hurt too I am sure. IMG_2625 (640x427)

He rattled off a list. 

Hubby was saying that was what Asher said in one of their conversations. I was impressed. Not just that he can remembers all those food items but he was able to understand the question and rattled off foods that he does get excited when they are given to him. IMG_2260 (640x427)

Pancakes are his current thing. We make pancakes mini size. My understanding is that they are similar except pikelets are thicker. Of course since we do not have flour in our pantry, we use coconut flour. After some experimentation, I like this ratio of coconut flour and eggs best. 

For some reason, Asher does not like nut butter. A pity because I LOVE THEM. I think it is the sticky feel that he isn’t a fan of. He has also grown to like nuts which is a big horror to me after reading and knowing that whole nuts are a no no to kids due to it being a possible choking hazard. It reinforces how he copies our eating habits as he knows I always have a small box of nuts in my handbag! IMG_2258 (640x427)

One of my ways of getting some great protein into him is using nut butter in pancakes. In my pantry we have jars of nut butters. Cashew, almond, ABC and dare I saw it… peanut. Yes peanut is a legume and it is not “paleo” but we love it and believe that we can have some of it if it sits ok with us. We do choose a brand without any other ingredients. 

I love these pancakes because I can make a big batch and fridge or freeze them. On my work day mornings, Asher will eat them without a fuss and they are easy to re heat. On some Fridays or Mondays, we make them together. He loves whisking the eggs and seeing me our the batter into the pan. An activity that 1) helps him to learn cooking/measuring/counting, 2) bonding between us, 3) he eats it, 4) less fuss on work mornings!

Linseed Coconut Bread (Paleo, Gluten Free)

IMG_2155 (640x427)As the weather is still cool, I really like to bake a loaf of bread or some savoury loaf of some sort whenever we have soups. We love our soups, and it is one of the easiest thing I get to do to batch up cooking. A big pot of soup usually lasts us for 2 days. That means I can return home from a workout, and know that a warm comforting bowl awaits me. Soup is not the same without something toasty to dip into hence I am always on the look out for healthy bread recipes or ingredients that I can experiment at home.IMG_2154 (640x427)

As a family, we have decided that bread is one thing we can do with less. Gluten just does not sit well with hubby and myself. We are not coelics though, but does not like how too much bread makes us feel. If we are out, rye and sourdough are our choices, but at home, we see no reason to have food that isn’t as nutrient dense as what other ingredients can provide. IMG_2158 (640x427)

I find that psyllium husks and linseed meal provides a more bread like texture. I have created this bread 3-4 times now, and have adjusted the liquid to dry ingredients ratio. I think this makes the cut! A friend experimented with chia egg which I think will work well too if you are wanting the bread to be less “eggy” or for allergy reasons. Asher loves his with avocado in the morning, while hubby likes to place a few slices of smoked salmon on his. It is a rather smallish size bread loaf though, but I would think it could even work well as a sandwich. Now, I just have to experiment with this recipe to make it a decent jaffle bread toastie!

Chewy Banana Date and Nut Bars + Toddler Snacks

IMG_2101 (427x640)The lure of the kids snacks section beckons. Just like snacks for adults, those little bars and crackers packed mini size is so convenient. Names with “muesli”, “yogurt”, “organic”, “whole fruit” on boxes appears to the health conscious mums and dads. 

I would admit that I have been lured into that section before. A little “organic date and dried fruit” bar sits in my handbag for those emergency times where Asher has finished what I have packed or when he rejected what I would prefer him to eat. IMG_2104 (427x640)

Those times of course increased as Asher learned that there is a possibility of having a “bar” if he says no enough. He would even go through my handbag to locate that “spare treat”. 

Enough is enough, and we decided to reduce if not eliminate purchase of those bars. If as adults we bypass the muesli bars section, why is it any different for Asher? Thankfully, we were getting a box every month or two and we reduced that to pretty much none in the past 3 months. 

So what changed? Asher is generally a good eater, so really it is about pre planning for us. His snacks are

– Bananas

– Mandarins orange

-strawberries

– Cucumber and capsicum sticks. 

-Cherry tomatoes

– Hard boiled eggs

– warm milk or babycino if we are outside

– chia seed puddings

– home made custard

– some home made baked goodies such as banana muffins or bread 

–  sulphate free ham or some smoked salmon 

– chickpeas

– popcorn 

– biltong

You will probably noticed that we haven’t shy away from dairy in his diet. Asher seems to be able to digest it so we are going with the flow with that unless we noticed otherwise. We have also allowed him to have some legumes in his diet, with chickpeas and popcorn on the list. We figured out that we would prefer to know how he respond to them than to shock his system when he gets to school and share copious amount of processed food and legumes without our knowledge. Deep down, I do not want him to grow up thinking that there food is “bad” and would prefer to educate him on what nourishes his body and some food we eat that may be more for tastes and satisfaction and they are to be kept a limit. 

Asher loves the cakes I make. However, he still associates “bars” with store bought ones and had initially refused to try any of my creations till recently. Sometimes, I just tell him it’s cake and he would happily snack on them! Toddlers! This one was a winner for him. It is probably still a little too sweet for my liking but it sure beats opening a packet snack food for him. It is slightly chewy but still easy to swallow. My proud moment is when he prefers having what I make than store bought cakes. IMG_2105 (640x427)

Sweet Potato Tuna Mornay (Gluten Free, Clean Eating, Paleo)

Sweet Potato Tuna MornayOn my off days, I like to try to make fresh lunches for Asher. It doesn’t always happen- and on those days, I will pull out some freezer store food for him. Back in Singapore, many advised me not to freeze food and that little ones should have fresh food daily. They caution me that it is “bad” for health. IMG_2036 (640x427)

I can see the reason for fresh food. They probably retain more nutrients and mostly (except for curries and soups), fresh just tastes better. My general thought is that home cooked frozen food is probably still better than store bought or fast food. I like to think that this stash of food is my security. If I’m caught up at work, or that we are in a hurry, I know that there is something nutritious in the freezer for him. For hubby, it means that he can pull something out and warm it up for Asher if I’m not around. It works for our family. 

For fresh meals, some options are

– soba noodles with pork mince and veges

– Stuffed tuna baked potato with veggies and sprinkle of cheese

– pan fried fish with sweet potato or pumpkin

– Quinoa with different veggies like carrots and capsicum with a protein

– stir fry sweet potato noodles 

– grass fed gluten free lamb sausages with sweet potato and mix of vegetables. 

We usually have eggs for breakfasts or snacks but if we don’t omelettes can be an options. Vegetables can be fresh or frozen depending on what I have on hand. I usually like to mix it up for Asher. IMG_2033 (640x427)

Sweet potato Tuna Mornay has been a winner recently. I would simmer tuna in a sauce of coconut milk, pinch of nutmeg, mixed frozen vegetables. Sometimes, I might add a tbsp of cheddar cheese. Sweet potato is either steamed or quickly cooked in the microwave and mashed with more coconut milk/milk. Placing the tuna at the bottom and the sweet potato at the top, I would grilled it for a few minutes till it becomes a little crusty. Parmesan cheese is lovely on it too. IMG_2039 (640x427)

Seeing Asher eat is a joy to me. I’m really lucky (for the moment anyway) to have a good eater. My hope is that as he grows older, he would continue to enjoy good clean healthy food. If you have a toddler or young kids, and are looking for some food ideas, hope this works for you too!

Banana Carrot Bread (Paleo, Gluten Free, Nut Free, Clean Eating, Dairy Free)

IMG_2031 (640x427)This is my another attempt to make breakfasts ahead of time. On average, I would make a batch of banana bread or mini banana cakes for snacks/breakies every 6 – 8 weeks.  A batch of banana cakes freeze quite well so I usually make around 16 of them, freezing some and rationing it for breakfasts/snacks for the next 2 days.

Banana bread is always a winner in my household as it is portable and lovely when toasted up. Hubby loves his with a little butter while Asher just gobble it up whenever he sees it. It means I have one less thing to worry about in the morning. Now that my work hours are going to change mid August, I can see myself making more things in advanced. IMG_2030 (640x427)

On my work days, breakfast ideas for me are simple. 

– greek yogurt with fresh berries or passionfruit and 2 tbsp of my coconut granola

– soft boiled eggs with smoked salmon and sauerkraut. The best thing is that hubby wakes earlier than me so he would prepare them and I would have breakie ALL done when I come down to the kitchen! I love that. 

– maybe two slices of the banana bread

– Coconut Vanilla Chia pudding

– Coconut granola with kefir or almond milk 

For Asher and my hubby

– The above except both does not like yogurt!

– Asher likes banana and avocado or avocado with some pear or apple! 

– Asher would have rice puffs mixed with sliced almonds with milk

– Hubby might have a slice or two of whatever I baked and in the fridge.

I decided that I could shred and add some carrots to the banana bread one day- just for variety but also added nourishment and nutrients. We all loved it! The sweetness of carrots and banana went so well. I was so excited that I brought a few slices to our friends who then proceeded to send me a photo of her little boy giving a thumps up! More veggies into our kids can’t be wrong isn’t it!

Apple Cinnamon Cookies (Paleo, Clean Eating, Gluten Free) + Asher’s favourite games and toys

IMG_1983 (427x640)Rain rain go away. Come again another day… Asher wants to go out and play! 

The lovely thing about having a toddler is the amount of play we get into. Everything can turn into a game. It has been such a long time since I did this, but I want to document the kind of games Asher has been into lately. I’m still not sure how it happens but he is 2 as of Friday *insert horror face* I’m a mum of a little man!

– Books. I think I have a book worm as a son. He loves books. ANY books. Especially books featuring vehicles. Trains, buses, cars, fire engines. He loves classics too. Like “Spot”, “We are going on a bear hunt”, “10 little fingers and toes” and more recently “the hungry caterpillar”.

-Trains. Yep. He loves Thomas. I’m in two minds about introducing too much Thomas to him. My thoughts are that kids should be expose to as many variety of the same item although I know that is rather hardRight now, he thinks Thomas is one of the trains. He still adores his other train books and will play with any trains. 

– Play shopping! Cash register and fake food

– Play cooking. Sizzling with his pan. As we cooked him some mushrooms or eggs up for breakfast, he would take the borrowed wooden plan and pretend to cook up his own meal too. 

– Ball games. Kicking and throwing. Balloons. 

– Drawing! He loves drawing circles.. and will ask me to help him draw triangles

– Painting. Although at the moment, we are painting with water. He dislikes mess and stickiness. It is a work I’m progress with play doh and textural play. 

– Slides. He received a slide for his first birthday and really love that. He would even slide his teddy down

– Cars. All kind of cars. Plus planes. 

– Lego. He is really into lego now. Building blocks. Telling me he has built a ship or a car! 

– Tractors. We got him a Tonka truck for his birthday (shhhh). 

– Cosy coupe- we don’t have that but he loves it when we visit friends.

– Singing. We can sing Row row a boat, abc, twinkle twinkle, wheels go round, bob the builder, ba ba black sheep…etc. The funny thing is we will catch him singing at random times to himself. Super adorable. 

– Music instruments like tambourines, egg shakers.. anything that has a rhythm. He would even bang on the boxes and call it a drum

– Puzzles. A friend bought him a fire engine puzzle and he loves it. We also have ABC puzzles and animal ones. 

– Rough play-. Tickles, upside downs. Anything that involves heaps of movement.

– Bubbles!

– Peek a boo. This is a surprised. I thought they would grow out of it but he would peek a boo every thing including holding my sweater and hiding himself there. 

– We like looking at buses, trucks, tractors on the road. 

– Tool box. He likes sawing and turning things

– We cook and bake a lot more now. He would sit on the bench and watch me cook or stir things. Sometimes he might have a go. IMG_1978 (640x427)

I’m sure I missed out other things. He is still a little yucky on sensory things like playdoh. I bought some special books that he can paint with just water which he is warming up to. Day care is doing a great job in exposing him to messy play too. He has no problems getting his hands dirty when he eats though!

I’m most surprised by his pretend play. He would stack a car up a truck and said that’s a car transporter. He would grab a bag and pretend that he is going shopping. He would use a toy kettle and said he is making tea. 

Apple and cinnamon. They can never go wrong together. I made these cookies for him and he seems to like it. He loves fruits so much that he probably thought he was eating apple pieces with dough stuck on it! They don’t last as long in the pantry and I do suggest double toasting them if you can. That way they can stay crispy longer. Enjoy these little nibbles.IMG_1979 (640x427)

Mini Orange Coconut Cakes (paleo, gluten free, nutfree, dairy free) + How I survive early mornings and late nights

Orange Coconut CakeYou know those days where setting the alarm is important? It hardly exists in my household anymore. Asher loves waking up early in the mornings. We rejoiced when he wakes between 6-7am. Sometimes it is between 5:30-6:30am. It’s what makes parenthood interesting. You never know what time you will wake. Take this morning, he woke up at 6:50am aka meaning I had a SLEEP IN! How good was that! 

I’m finding it really tricky to sleep earlier though. Since starting work, those quiet evenings when Asher sleeps becomes even more precious. He usually goes to bed between 7:30-8pm. It does varies depending on his nap times and if we are out on weekends. Generally though, he is asleep by 8:30pm latest. Hubby and I would then clean up, prep for the next day, put a load of washing on and watch an episode of Masterchef with a bowl of fruits and hot tea. That is when we attempt to have a decent conversation and plan for the weekend or whatever event we have on. That means we try to get to bed by 11pm, though realistically, it’s closer to 11:30pm. 

IMG_1929 (640x427)So if we have sleep between 11:30pm-5:30am, that’s around 6 hours. Give and take an additional hour or so. Hey, pretty good right? Not on the nights where Asher has difficulty settling or falls sick. On average, Asher will wake once a night. Most nights, it doesn’t  take long to re settle him. He just want to know we are around and nearby. A comfort hug and light strokes and he is back down in 15 minutes. Other nights, we have NO idea why he is up. We would have gone through the list and he would still be upset. It could be toddler nightmares or teething. Whatever the case is, we try to comfort him the best we can by being present. 

So really? On some nights, one of us will have less than 5 hours of sleep. Maybe 3-4 hours. How do we manage to get through the day?IMG_1925 (640x427)

– Hubby and I try to take turns. We learned that it is easier to take turns by days. So at least one of us have a decent night sleep on some nights. This usually makes the next night more bearable.

– Coffee. I would need a shot by 4pm. I try to delay drinking coffee till the late afternoon when I really need it. Some people struggle with sleep having coffee so late in the day. I need it to stay awake till 11pm!! hubby would have his earlier in the morning though. 

– We have a mattress in Asher’s room. Some nights, it is just easier to sleep there or with him on the mattress. That buys us an additional hr or two sleep. Plus it’s more comfortable than sleeping on the carpet. 

– Eat well. I cannot stress how important nutrition is. Just keeping vegetable sticks, nuts, protein like eggs around helps to keep the sugar level balance and not range for sweets when the 3pm slumps hits. Also, breakfast. If I have to wake at 5:30am, give me my food! 

– I may look like a zombie at the gym at 5:30pm but I always feel better after a workout. That endorphins hit is so good…

– First thing I do when I wake up is to hit the loo, brush my teeth and wash my face. Part of my morning routine is put on make up and going out clothes. That helps me feel a little more human and look slightly more presentable. 

– Keep busy. I try not to think about how little or much sleep I have. I just have to keep moving and doing things. 

– On days that I do not work and put Asher down for a nap, I might rest with him. It might be between 10-20 minutes but it makes a big difference. 

– Having something positive to look forward to. On weekends, we have family lunches. A good coffee always makes me happy. And a trip to the farmers markets. 

I like to think that I can be more productive if I wake earlier. On my work days, I tell myself that I get an extra 30 minutes or so with Asher before work begins. On my non-work days,  I might do a quick vacuum around the house before our swimming class. I might schedule in an activity with Asher. Like these cakes for instance. Asher has developed a curiosity  around what we do in the kitchen. Plus he loves oranges. IMG_1924 (427x640)

Using the pressure cooker, I steamed the orange for 15 minutes while he ate breakfast. Then all I did was to sit him on the bench, and get him to tip measured out ingredients into the food processor. He watches it whirls while giving me a cuddle (It still scares him a little!), and then we try spooning it to the little cups. I place it in the oven, and tell him that he made it. He patiently waited for those cakes to come out of the oven, cool and had one before his swimming class. Then he looked at me and said “asher made” with that bright look in his eyes.

That made me melt a little. Perhaps that 5:30am wake up was worth it (who am I kidding…?!?)
