Perhaps you are looking at something light for dessert. How about a chocolate cake made out of olive oil rather than butter? I adapted this recipe from recipezaar to incorporate the fruit ofthe season- strawberries. It’s also good for ppl with a dairy free diet.
Despite not using butter, the cake turned out moist. My only concern is that it uses 5 eggs-that’s alot for a small cake!
1 punnet of strawberries halves
1) Sift all dry ingredients together except the sugar. Beat eggs and sugar till thick and almost double in volume. Add in vanilla extract.
2) Fold dry ingredients into egg mixture. Pour half the batter in 9 inch prepared round cake tin. Place strawberries on it. Pour the other half of the batter into tin.
3) Bake for 40 minutes. Cool and dust with icing sugar!
